Almancio Vega Viton is 56 years old and lives with his wife María Hurtado Terrones is a beautiful coffee farm among mountains, forests and small rivers over 2000 masl. In that place, all looks Green and beautiful. The Romerillo farm is located in the highlands of Jaén. 2 hours approx by car and then you have to walk up around 45 minutes. Usually, the farmer has to move the coffee to the big road with horses.
All the coffee is hand-picked, red and yellow cherries and then the coffee is pulped and fermented for around 48 hours because during low-temperature environment conditions. All the dried process is in small dry mills or to the sunlight. To dry coffee in the highlands takes more than 12 days.
When the coffee is dry, Almancio delivers the coffee to the Cooperative Sol&Café. Almancio Vega is one of the best farmers at the Coop. Every year he tries to maintain his quality coffee, he knows how to produce specialty coffee and he feels very proud for being a good coffee farmer.
